Martin Boetz, the executive chef at the Longrain Thai restaurant in Springvale, Australia, is profiled here by The Age newspaper. On a trip to a local Thai grocer, Boetz explained the importance for galangal to be "pink and vibrant," for lemongrass to be "thin and young," and he had an interesting opinion on inexpensive brands of fish sauce. "Bad fish sauce tastes like a decomposed cat has fallen into a vat," he said. Boetz also said that he hated fusion food, and that the best fish sauce brand that is widely available is Squid brand. Boetz said that when cooking Thai food, he tries to stay true to the traditional Thai recipes and cooking techniques.

Thailand considers law allowing transsexuals to claim title of adopted gender
Thailand is considering a law to allow people who have had a sex change operation, or kathoeys as they are called in Thai, to officially change their title. The proposal is being considered by the country's National Legislative Assembly to support an anti-discrimination provision in the draft constitution. Wiroon Tangcharoen, an assembly member who is also rector of Srinakharinwirot University, said he supported the move, and said he did not believe the law would cause any problems in university dormitories, where students are segregated by sex.

Saudis returning from Thailand face grilling
Many Saudis who visit Thailand are unaware of the kingdom's 12-year ban on travel to the country, and some have returned from a vacation to the land of smiles to face questioning from Saudi authorities. Saudi Arabia has banned its citizens from traveling to Thailand because it claims Thailand has high levels of crime, prostitution and alcohol consumption. The Saudi government said those breaking the ban would be prevented from traveling for six months to three years and forced to pay a fine. Other countries banned for travel by Saudis include Israel, Iraq and Bosnia.

Elvis is alive and well - 15,000 miles from Graceland
On Aug. 3, hundreds gathered at the grand ballroom of Bangkok’s Asia Hotel to commemorate the death of a Elvis Presley with the 30th Elvis Presley Memory Lives on 2007 concert. The event featured a number of Asian and Thai Elvis impersonators, some of which dressed like the King in his early days, and some opting to emulate him in his later, more robust years. The Asia Hotel has hosted the event since 1997. "This is close to my 10th year in Bangkok impersonating Elvis," said Rudy Souza, an Elvis impersonator from Macau who currently works in Macau’s hotel and casino industry. "Although Elvis Presley’s death was unbelievable, I feel as though I am reviving his legacy whenever I impersonate."

Brad Adams, executive director of the Asia division of Human Rights Watch, said Tuesday in a letter that the English Premier League showed a “shocking lack of interest” in ethical standards for allowing Thaksin Shinawatra’s takeover of the Manchester City football club. Adams said Thaksin was a “human rights abuser of the worst kind” who should not have passed the League’s Fit and Proper Persons Test. “Our research and that of other credible organizations shows that Thaksin’s time in office was characterized by numerous extrajudicial executions, ‘disappearances,’ illegal abductions, arbitrary detentions, torture and other mistreatment of persons and attacks on media freedoms,” Adams said in the letter. His past actions should lead to him being subjected to investigations by impartial police and prosecutors, not welcomed into the club of owners of the most popular football league in the world.”
